I believe that ride that was only there from 1998 to 2000 was Rocket Rods. The ride had many problems considering they tried to turn the former people mover track into a high speed ride. Star Tours opened 1985(I have the opening day watch). It replaced Adventures Through Innerspace.
Lets see, on mainstreet there is the fire engine, the trolly, the double decker bus, and the horse drawn carrage. (4)

King Arthur's Carrousel has 72 horses.
Indeed the apple was stolen quite frequently. It was a grad night tradition to steal the apple. When they did an overhaul of the ride, they turned it into an untouchable optical image.
The "What time is the 9:00 parade?" is a question guests commonly ask cast members. There is no Tomsawyer boat ride. There is only the Davy Crocket Explorer Cannoes, Tom Sawyer Island, Sailing Ship Columbia, Mark Twain River Boat, and there used to be the Keel Boats. I think you are thinking of the island. The island is currently on the drawing board. It is planned to be a pirate island.
The Western Rollar Coaster(Big Thunder Mountain Rail Road) is down frequently mostly because a train will stall on a lift hill. Or the computer(PLC) will not let the train procede because it thinks that two vechiles will collide.
For the secret areas, there are quite a few. But, here is two of my favorites.
Matterhorn Half Court. there is a half court in the top of the mountain to allow off duty mountain climbers to shoot hoops during thier breaks.
Club 33. A members only excluve club. It is in New Orleans next to Pirates. You will recognize the entrance due to a plaque reading "33". You cannot get in unless you are a member or know a member. It is the only place in the park where alcohol is served. Whats interesting about it is, its not actualy in Disneyland. People believe that the 33 comes from the amount of sponsers the park originaly had, but the name actualy comes from its street adress. 33 Royal Street. Most people just pass right by it and never notice the club, and Cast Members won't really talk about it. I've only been inside it once. Inside is a gold elevator and a circular staircase going around it for those who do not wish to use the elevator. Upstairs there are two dinning rooms in which they serve five star meals.

The ride you are thinking of is Spaceship Earth. It takes place inside a giant geodesic dome. It serves as the landmark for Epcot, just like the Castle is the Landmark for Disneyland. Inside is a slow moving continously loading ride using the omnimover system that takes you in an upward spiral towards the top of the dome where you learn about the history of communication. Then at the top, your car turns around and you go spiriling down backwards. Its an interesting ride. This ride is in no way a rollar coaster. Also a fun little note about spaceship earth. As you know, it rains quite frequently in Florida. But has anyone ever noticed that water does not fall off the dome? That is because in every section of the dome, there is a small drainage system to take the water off the dome.

One and only one. When Disneyland does its character scheduling, they make sure two of the same characters are not onstage. What if you saw Mickey on Mainstreet, then saw him in Tomorrow land? It would ruin the illusion of Mickey for younger kids. Now if you are talking about how many people play mickey, thats a different story. There are several people who can play mickey on a given day. It used to be one older man named Paul Castle who was the only one who played Mickey. Now, most of the people that play Mickey(as well as most other characters) is a women.
