How can I open a map in Sapien thats not the tutorial thing?

You have to make a map that you are making into a .scenario file. Then open it up in Sapien.

You make it in 3ds max or Gmax, if you are making a custom made map. If you are doing an already made map, just decompile the map and get all its tags.
