Because it enables you to do mods that are much more advanced

editing the meta is how we find out things
before we could have the programs like sparkedit or hmt, we had to edit the meta, then after that, you can make a program to do all the steps you took when changing the meta
it is simply the long trial and error way of finding out new stuff
