a giant grunt... is this possible?

Your not going to get very far with this.
DECOY tried this years ago but with a hunter.
He had mild success but the animations were what really screwed it up and when he did get the collision model enlarged there were holes in the mesh.

Trying to scale the collision was a pain in the ass. It worked reasonably well for somthing simple such as a log or boulder, but if you try it on something as complex as a biped, you'll get some VERY interesting results as soon as the biped moves ( think Picasso....)
You need PCE modding.
extract the biped with the ghosts tools, dissasemble it in MAX, expand it, redo the all nodes, recompile and then place it in a CE map.
rip it out of the CE map and drop it into your PC bloodgulch.
Simple really.......
You could start by going over to a Halomodding site with decent tutorials, like (www.moddercentral.net)

now that i thought it throughly, it might just be a scenery, but with a mod2 of a scaled grunt! Idk, but it might be possible to create a fake giant grunt... hmm.... because there was only one, in the mod, i can only assume that one person, thought it was pretty damn retarded to see a giant limping grunt. as i did with the other mod myself, using a hunter. he or she might have replaced the grunt spawn with just another AI.
my only conclusion is that he might have used a giant boulder for its oversized collision, and made everyone died because of the demon grunt, but really, its the covenant fighting the flood....
that could be an explaination.... is it?
